Lavender Lemon Margarita

This Lavender Lemon Margarita is made with a homemade lavender simple syrup, fresh lemon juice, tequila, and a splash of mineral water. All that’s missing is a beach and a hammock.

In a medium saucepan combine all the ingredients. Bring to a boil over medium-high heat. Reduce the heat to low and simmer until the sugar has dissolved completely, about 2 minutes. Remove from heat, cover, and let steep for 30 minutes. Let cool and strain through a fine-mesh strainer into a jar. Store in refrigerator for up to 1 week.
Lavender Lemon Margarita:
Wet the rim of a glass with agave nectar or lemon juice, then dip in salt. Fill the glass with ice.
In a shaker, add simple syrup, tequila, and lemon juice, then top with ice. Cover tightly and shake for 15 seconds.
Strain into glass, top with mineral water, and garnish with a lemon wheel and a sprig of lavender.
